Mac & Cheese with My Dad's Chips Crust

Ingredients
- 1 pound elbow macaroni
- 4 tablespoons butter, plus 2 tablespoons melted for the topping
- 1/4 cup all-purpose flour
- 3 cups whole milk, warmed
- 2 cups sharp cheddar, shredded
- 1 cup gruyère, shredded
- 1/2 cup parmesan, grated
- 1 teaspoon Dijon mustard
- 1/2 teaspoon smoked paprika
- Salt and black pepper
- 1/2 bag My Dad's Chips Original, coarsely crushed
Directions
- 1Heat the oven to 375°F and butter a 9x13 baking dish.
- 2Boil the macaroni 2 minutes short of package directions, then drain.
- 3Melt 4 tablespoons butter in a large pot, whisk in the flour, and cook 1 minute.
- 4Whisk in the warm milk slowly and simmer until the sauce coats a spoon, about 5 minutes.
- 5Off the heat, stir in the cheddar, gruyère, Dijon, paprika, salt, and pepper until smooth.
- 6Fold in the pasta and transfer to the baking dish.
- 7Toss the crushed chips with the melted butter and parmesan, then scatter over the top.
- 8Bake 25 to 30 minutes, until bubbling at the edges and the crust is deep golden. Rest 10 minutes before serving.
